Got it. There is not currently a way to use to the Box search function in the web app to filter based on global metadata that isn’t in a template.

By Box UI - do you mean the normal web application or ui elements?
If you mean the web app, you can click the filter button in the search bar, select metadata, pick a template, and enter data for that template. It will then return matching content based on the input.

While you cannot use the search Metadata filters for this case, the free text search (the default search box) can be used to search for documents containing the Custom Metadata values.
